Spelt banana muffins

Ingredients for 1 servings:

  • 400 g spelt flour
  • 80 ml rapeseed oil
  • 4 eggs
  • 100 g brown sugar
  • 70 ml agave syrup
  • 600 g banana(s), mashed
  • 200 g chocolate shavings
  • 1 packet of baking powder
  • 1 pinch of salt

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

makes 12 pieces

Beat the eggs, sugar, agave syrup, salt, and oil with a hand mixer or food processor for several minutes. Stir in the mashed bananas thoroughly. Combine the flour, baking powder, and chocolate shavings and briefly stir into the batter. Pour the batter into muffin tins and bake at 180°C (top/bottom heat) until golden brown. Mini muffins take 14 minutes, regular muffins about 30 minutes.
