Spice cake with jelly

Ingredients for 1 servings:

  • 250 g butter
  • 125 g sugar
  • 1 sachet vanilla sugar or 1 tbsp homemade
  • 1 pinch of salt
  • 5 eggs
  • 250 g jelly, e.g. blackberry, elderberry, currant, quince jelly, etc.
  • 10 g gingerbread spice
  • 2 tbsp cocoa powder
  • 2 tbsp rum or Cointreau
  • 100 g ground almonds or nuts
  • 300 g flour
  • 1 packet of baking powder
  • 200 ml milk

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cream the butter, sugar, and salt together until fluffy. Then beat in the eggs, one at a time. Add the jelly, spices, cocoa, and nuts. Stir in the flour, baking powder, rum, and milk. Spread the mixture onto a baking sheet. Bake for approx. 20 minutes at 150°C (fan oven, top/bottom heat: 175°C). Please keep an eye on this, as every oven bakes differently. You can cover the cake with chocolate coating or icing, as you like. Decorations could include brittle, flaked almonds, or sugar pearls. The cake tastes delicious if you cut it in half after baking, spread one piece again with the jelly, and place the other piece on top. Cover and decorate as desired.
