Spicy blueberry jam

Ingredients for 1 servings:

  • 1,500 g blueberries
  • 1 lemon(s), juice
  • 1 vanilla pod(s), split
  • 1 stalk(s) cinnamon
  • 2 bay leaves
  • ¼ tsp black pepper, freshly ground
  • 1 tsp. clove powder
  • 500 g gelling sugar, 3:1

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Rinse the blueberries with cold water and drain well. Mash with a fork or briefly puree. Mix with lemon juice, all spices, and gelling sugar, cover, and let stand overnight. Then, while stirring, bring to a slow boil and simmer for 8 minutes. Remove the vanilla pod, cinnamon stick, and bay leaves. Pour the jam into prepared twist-off jars while still hot and seal immediately. It tastes great with pancakes, but also with cheese.
