Spicy chili sauce

Ingredients for 6 servings:

  • 2 onions
  • 4 cloves garlic
  • 200 ml tomato(s) (pizza tomatoes, unseasoned)
  • 2 tbsp oil (hot sesame oil)
  • 1 small chili pepper(s), super hot
  • 6 large chili peppers, dried
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp balsamic vinegar
  • 3 tbsp lemon juice
  • 1 tsp lemongrass, ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for fondue or dipping

Heat sesame oil in a pan. Finely chop the onions, small chilies, and garlic. Add to the pan and sauté briefly. Do not allow to brown. Immediately deglaze with the pizza tomatoes. Add a cup of water. Stir in the balsamic vinegar. Let it simmer for 10 minutes. Crush the dried chilies and add them. Add the soy sauce and lemongrass powder. Let it reduce for about 30 minutes. Check the spiciness occasionally. Finally, add the sugar, salt, and lemon juice. Stir and let it stand briefly. Strain the hot sauce through a not-too-fine sieve. Pour into a jar and store in the refrigerator.
