Ingredients for 6 servings:
- 2 packs of herring fillet(s) in oil, approx. 16 fillets
- 3 onions
- 3 gherkins
- 2 apples (Boskoop)
- 1 liter milk, 1.5% fat
- 400 ml cream
- 200 ml sour cream
- 400 ml sour cream
- 2 bay leaves
- 6 juniper berries, crushed
- 5 allspice berries
- 2 tsp, heaped dill
- 1 tsp mustard seeds, optional
- 2 chili peppers, optional
- Black pepper, coarsely ground
- Salt
Instructions
Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes
Soak the herring fillet in milk for about an hour to release some of the oil. Thinly slice the onions and coarsely grate the apples and gherkins. Mix the cream, sour cream, and sour cream with the apples, gherkins, and onions. Add a little milk to achieve the desired consistency. Now add the spices and season with salt. Remove the fish from the milk and fold in. Let everything marinate in the refrigerator for at least a day, then season again with salt and pepper. Serve with floury boiled potatoes.
