Spicy Gouda salad

Ingredients for 2 servings:

  • 500 g cheese (Gouda)
  • 100 g olives
  • 4 tomatoes, dried, preserved in oil
  • 100 g artichoke(s), pickled
  • 1 clove(s) garlic
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt and pepper
  • Sugar
  • herbs, Italian

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Dice the Gouda, thinly slice the olives and artichokes, finely chop the sun-dried tomatoes, and place everything in a bowl. Mix the vinegar, oil, balsamic vinegar, and a pinch of sugar to make a dressing and drizzle over the salad. Season with salt, pepper, and herbs. Cover and refrigerate the Gouda salad for at least 2 hours.
