Ingredients
- 2 piece Carrots, about 150 gr.
- 8 Stalk Celery, about 350 gr.
- 1 Bit Fresh celery, about 140 gr.
- 1 piece Potato
- 2 piece Onion
- 1 Bit Garlic
- 5 piece Dried tomatoes
- 5 piece Olive oil
- 1200 ml Vegetable broth
- 150 g Green kernels
- 1 tbsp Paprika pulp
- 3 Pinches Sugar
- Salt
- Black pepper from the mill
Instructions
- First soak the green spelled in lukewarm water for a good 30 minutes.
- Then peel and finely dice the onion and garlic. Also cut the celery into small cubes. Put the light green leaves of the celery aside, peel the rest a little and cut into thin slices. Clean the carrots and cut into bite-sized pieces. Peel and dice the potato. Cut the dried tomatoes into small pieces.
- Heat the olive oil and sear the onion, garlic and diced tomatoes well. Then add the paprika pulp and sugar and roast again.
- Deglaze with the hot vegetable stock.
- Strain the green spelled and now add it together with the vegetables, season a little with salt & pepper and simmer on a low heat until the vegetables are soft.
- In the meantime, finely chop the leafy green of the celery and add to the pot.
- Now season the finished soup again, put it in a soup bowl and sprinkle with some "green" ..... enjoy your meal .....
