Spicy grilled mushrooms with herb Gouda

Ingredients for 10 servings:

  • 500 g mushrooms, large
  • 200 g cheese (Gouda, young), grated, possibly more
  • 1 red pepper
  • 4 tbsp olive oil
  • 5 tsp, heaped herbs, Italian

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Grilled pizza mushrooms

Pour olive oil evenly onto a large plate. Clean the mushrooms, remove the stems, and place the mushroom caps in the olive oil. Finely chop the stems and roast them in a pan (without fat), stirring occasionally. Mix the Gouda, the chopped stems, and herbs well, and fill the mushrooms to the brim. Cut open the bell pepper (remove the seeds) and finely chop. Sprinkle over the mushrooms. Sprinkle the remaining cheese mixture over the mushrooms to form a topping so that the cheese can later drip onto the edges of the mushrooms. Grill the mushrooms until the cheese has melted. Note: Depending on how much cheese mixture fits into the mushroom caps, you may need more or less Gouda cheese.
