Spicy mixed bread

Ingredients for 1 servings:

  • 400 g wheat flour, 700
  • 100 g rye flour, 960
  • 1 packet of dry yeast
  • 15 g salt
  • 2 tbsp oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp caraway seeds
  • 1 tbsp honey
  • 1 tbsp bread spice mix
  • 285 ml water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Boil water, add the bread spice, and remove from the heat. Let it cool and set aside. Knead all the ingredients into a soft bread dough (add a few more spoonfuls of water if necessary). Cover and keep the dough warm and let it rise (about 1.5 hours). Then knead it again, shape it into a loaf or place it in a loaf pan, cut a slit in the top, brush with water, and bake in a preheated oven at 230°C for about 15 minutes, then reduce the temperature to 200°C and bake for about 25 minutes. I sprinkle the bread 3-4 times during this time.
