Ingredients for 4 servings:
- 1 garlic clove(s)
- 1 m.-sized onion(s)
- 1 red chili pepper(s)
- 2 tbsp olive oil
- 400 g minced meat, mixed
- 1 can kidney beans (400 g)
- 1 can corn kernels (250 g)
- 1 can of chopped tomatoes (400 g)
- 3 tbsp tomato paste
- 1 liter meat broth or vegetable broth
- 250 g pasta (croissants)
- salt and pepper
- coriander leaves for garnishing
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Peel and finely chop the garlic and onion. Trim, deseed, and very finely chop the chili pepper. Heat the oil in a pan and fry the minced meat with the garlic, onion, and chili. Drain the kidney beans and sweetcorn. Then add them to the meat. Add the tomatoes and their juices and heat everything through, stirring. Stir the tomato paste into the mixture and pour in the stock. Add the uncooked pasta and simmer until tender. Season with salt and pepper and serve garnished with coriander.
