Ingredients for 4 servings:

  • 50 g pine nuts
  • 75 g nuts or peeled almonds
  • 1 small garlic clove(s)
  • 1 tbsp olive oil, high quality
  • 1 tsp sugar
  • ½ tsp paprika powder
  • ½ tsp sage, dried
  • ½ tsp marjoram, dried
  • ½ tsp salt
  • ½ tsp sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Alternative to Parmesan for pasta and co.

Grind almonds or other large nuts (about the size of pine nuts). Roast the nuts evenly in a dry pan. Add all the spices, including the sugar, and stir to combine. Reduce heat to low. Pour the nut mixture into a glass bowl. Heat the olive oil in the pan and briefly fry the finely crushed garlic until lightly browned. Pour over the nuts and stir to combine. This makes a delicious, spicy topping for gnocchi, pasta with tomato sauce, etc. It’s a change from Parmesan and also suitable for vegans.
