Spicy Omelette with Vegetables

Ingredients
 

  • 100 g Brown mushrooms
  • 100 g Yellow pepper
  • 100 g Red pepper
  • 100 g Zucchini
  • 100 g Cucumber
  • 100 g Boiled ham
  • 50 g Onion
  • 50 g Spring onions
  • 1 Clove of garlic
  • 2 Eggs
  • 2 tbsp Olive oil
  • Coarse sea salt from the mill
  • Colorful pepper from the mill

Instructions
 

  • Clean / brush the mushrooms, halve and cut into slices. Clean and wash the peppers and cut into sticks. Peel the zucchini and cucumber, cut eighths lengthways and cut into small pieces. Cut the ham into small pieces. Peel and dice the onion. Clean and wash the spring onions and cut into rings. Peel and finely dice the garlic clove. Beat the eggs, whisk roughly, fold in the spring onion rings and season with plenty of salt and pepper. Heat oil (2 tbsp) in a medium-sized pan, fry the onion and garlic cubes with the ham pieces in them, add the vegetables () and fry / simmer for about 6 - 8 minutes. Sprinkle / drizzle over the beaten egg with the spring onion rings, cook / fry with the lid closed at a low temperature for approx. 10 - 12 minutes, season with plenty of salt and pepper and serve in the pan.
