Spicy potato casserole

Ingredients for 4 servings:

  • 1,200 g potato(s), waxy
  • 2 bell peppers, red and green
  • 2 onions
  • 300 g salami, in one piece, or Cabanossi
  • 150 ml beef broth or vegetable broth
  • 100 ml cream
  • 250 g crème fraîche or sour cream
  • 250 g cheese, grated, e.g. Gouda or Esrom or Leerdamer
  • Sambal Oelek, or a pepperoni, or Tabasco, or…

This is actually my boyfriend’s recipe, but since he doesn’t write here, I wanted to share it with you anyway, because friends keep requesting it. It’s a great warm addition to parties. Boil the potatoes until they’re not too soft, peel them, and slice them. Roughly dice the peppers and onions, cut the salami into slices about 3 mm thick, quartering them if necessary depending on the size of the slices. Briefly and vigorously fry the vegetables and salami together and spread them in a casserole dish with the potatoes. Stir together the broth, cream, and crème fraîche. Season with sambal oelek to taste (a tablespoon should be enough), add more salt if desired, and pour over the casserole. Sprinkle with cheese and bake in the oven at 180°C fan/convection oven for about 30 minutes until golden brown.
