Spicy tomato and feta sauce (for fusilli)

Ingredients for 2 servings:

  • 1 onion(s), finely chopped
  • 2 garlic cloves, finely chopped
  • 3 tbsp olive oil or other
  • 6 tomatoes, roughly chopped
  • ½ pack of feta cheese
  • 1 chili pepper(s), dried
  • Turmeric, cumin, ginger powder, celery salt
  • 2 tbsp mango chutney or jam
  • 3 tbsp cream
  • Salt and pepper, possibly vegetable stock.
  • Vegetables of your choice
  • 2 tbsp tomato paste
  • chives

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Sauté onions and garlic, add vegetables of your choice, add chopped tomatoes (+water), and chili peppers, and let it cook. Crumble in feta and stir to dissolve. Season with spices of your choice and mango chutney, adding a little cream if desired. This goes very well with pasta.
