Spinach dumplings

Ingredients for 4 servings:

  • 250 g bread(s) (dumpling bread)
  • 1 onion(s)
  • ¼ liter of milk
  • Cheese, grated (eg Emmental)
  • 1 pack of frozen spinach
  • 3 eggs
  • butter
  • salt and pepper
  • Parmesan
  • nutmeg
  • Garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the spinach well in advance and season with garlic, salt, pepper, and nutmeg. Mix the grated cheese with the dumpling bread. Sauté the finely chopped onion and add it to the salted dumpling bread. Combine the milk with the eggs and pour over the mixture. Stir thoroughly. Add the spinach and mix everything into a firm paste, preferably with your hands. Form dumplings and simmer gently in salted water for about 15 minutes. Then sprinkle with Parmesan cheese and drizzle with browned butter.
