Spinach nest with egg, tomato and mozzarella

Ingredients for 1 servings:

  • 250 g fresh leaf spinach
  • 1 egg(s)
  • 20 g mini mozzarella
  • ½ beefsteak tomato(s)
  • ½ garlic clove(s)
  • ½ onion(s)

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the garlic and onion in oil. Wash the spinach leaves and add them to the pan, stirring frequently. When the spinach has almost completely broken down, remove the pan from the heat and let the spinach cool. Drain the spinach mixture thoroughly, then form it into a ball. Spread baking paper on a baking sheet and flatten the spinach ball, then make a hole in the center. Pour the egg into the hole in the spinach mixture. Bake the spinach nest in the oven at 140°C for about 15 minutes. In the meantime, slice the mozzarella and tomatoes. Arrange everything nicely.
