Spinach on a bed of rice

Ingredients for 4 servings:

  • 1 tbsp butter
  • 1 onion(s), finely chopped
  • 2 cups rice
  • 4 cups chicken broth
  • 100 g cheese, cubes
  • 1 pack of frozen spinach
  • 100 g bacon, slices

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the onion in hot butter until translucent. Add the rice and sauté briefly. Deglaze with the broth and bring to a boil. Remove from the heat and fold in the cheese. Place the frozen spinach in a casserole dish, pour over the rice and liquid. Cook at 200°C for 40-45 minutes. Just before the end of the cooking time, add the bacon slices to the casserole. Note: The cup size doesn’t matter, just the 2:4 ratio must be correct. I add the diced bacon directly to the rice.
