Spinach pancakes

Ingredients for 1 servings:

  • 150 g spinach, frozen
  • 1 onion(s)
  • 1 garlic clove(s)
  • 250 g wheat flour
  • 1 tsp, heaped baking powder
  • 270 ml milk
  • 30 g Parmesan, grated
  • 1 egg(s)
  • 1 tsp salt
  • vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Vegetarian

Thaw the spinach. Dice the onion and sauté in a little oil. Grate the garlic and add it to the onions along with the spinach, sauté briefly, and then remove from the heat. In a bowl, combine the remaining ingredients except the oil and stir in the vegetables. Heat a little oil in a non-stick pan, add 2 tablespoons of batter to each pancake, and cook on both sides. Instead of the Parmesan, you can also dice a ball of mozzarella and add it to the batter. Makes 12-14 pancakes. Serve with herb curd cheese, a yogurt dip, or something similar.
