Spinach soup

Ingredients for 4 servings:

  • 20 g butter or fat
  • 20 g flour
  • ½ liter of water
  • 300 g spinach, frozen
  • 150 g cream cheese spread
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Melt 20g of margarine in a saucepan, add 20g of flour, and sweat, stirring lightly with a whisk. Then slowly add 1/2 liter of water, stirring vigorously with a whisk. Thaw 300g of frozen spinach in the water, then add 150g of cream cheese and melt. Season the soup with salt and pepper. Tip: I always top with cubed broth (or beef broth). If you don’t like cheese, use sour cream; it tastes fresher and is also delicious cold.
