Spring onion and mustard pork medallions

Ingredients for 2 servings:

  • 4 pork medallions
  • 4 spring onions
  • ½ onion(s)
  • 50 g cheese (Gouda), grated
  • 1 tsp mustard
  • 1 tbsp breadcrumbs
  • salt and pepper
  • 2 tbsp oil
  • 1 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the onion into rings or strips, fry in 1 tablespoon of oil, and place in a bowl. Cut the spring onions into rings, fry in the pan with the butter, then add to the onions and let cool. Then mix the onions with the cheese, breadcrumbs, mustard, salt, and pepper. Sear the pork medallions in 1 tablespoon of oil for one minute on each side, then reduce the heat to low and continue frying for another 3-4 minutes. If necessary, lightly score them to check they are cooked through. Place the medallions in a baking dish, cover with the spring onion mixture, and bake for 10 minutes at 200 degrees Celsius (400 degrees Fahrenheit) using top/bottom heat. I served them with fried potatoes as a side dish.
