Ingredients for 4 servings:

  • 500 g minced beef
  • 2 carrots, grated
  • 50 g glass noodles
  • Water, hot for soaking
  • 1 cube of beef broth
  • 1 pkt. dough sheets (spring roll dough), frozen
  • 2 cloves garlic
  • 1 onion(s)
  • 1 egg(s)
  • salt and pepper
  • n. B. Oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

First, thaw the dough. Grate the carrots, dice the onions, and garlic. Soak the glass noodles in hot water and cut into 2-cm pieces. Heat a little oil in a pan and fry the minced meat with the garlic, onion, and beef stock cube. Towards the end, add the carrots and glass noodles and let them cook for a while. Let the filling cool. Wrap the filling in the spring roll wrappers and seal with the egg. Wrap the dough in a damp towel, as it dries out quite quickly. Fry the spring rolls in hot oil; they can also be baked in the oven, but they won’t be as crispy. I learned this recipe from my mother; I usually use the large spring roll wrappers; it’s much faster that way.
