Ingredients for 2 servings:
- ½ honeydew melon(s)
- 100 g lamb’s lettuce
- ½ head of iceberg lettuce
- 1 tbsp rosehip jam
- 2 tbsp apple juice
- 1 tsp rapeseed oil or safflower oil
- 1 pinch of salt

with melon
If necessary, chop and wash the lettuce, spin dry, remove the melon from the rind and cut into cubes. Mix the ingredients for the dressing well and pour over the salad. This amount is intended as a side dish for 2 people. If you have histamine intolerance (HI), please note: I never use pre-chopped lettuce, as histamine quickly forms at the cut edges. It is always better to prepare it fresh, discard leaves with brown spots on the edges or cut out the brown spots generously. Honeydew melon is well tolerated by people with HI, but watermelon is not. Apple juice serves as a vinegar substitute in the dressing, but vinegar is not tolerated. Rosehip jam is also slightly acidic, so be careful with other varieties, as many varieties are not tolerated by people with HI (e.g. strawberry, raspberry, etc.). Apart from salt, most spices are not tolerated by HI, which is why I avoid pepper etc. Be careful with the oil, rapeseed oil and safflower oil work well in my experience, sunflower oil and soybean oil are particularly incompatible (often found in salad oil etc., read the ingredients list!), mild olive oil might also work.
