Stewed Cucumber with New Potatoes

The perfect stewed cucumber with new potatoes recipe with a picture and simple step-by-step instructions.

  • 2 Large cucumbers
  • 2 Onions
  • Salt pepper
  • Fresh herbs chopped
  • Olive oil
  • New potatoes
  • 0,5 Cup Vegetable broth
  1. Peel the cucumber, cut in half lengthways, scrape out the core with a spoon. Cut into approx. 1 cm thick slices. Peel onion and chop finely. If you like, you can also dice a clove of garlic.
  1. Sauté the onion in olive oil, add the cucumber slices, toss and let simmer in the vegetable stock. If you like, you can add cream. Season well with salt and pepper and add fresh herbs.
  1. I served new potatoes from my own garden and a dip made from quark mixed with yogurt, salt and pepper. It’s a light summer meal.
