Stewed Cucumbers / Mince Pot

Ingredients
 

  • 3 tbsp Oil: sun + olive
  • 300 g Mixed organic minced meat
  • 50 g Bacon
  • 1 piece Big shallot
  • 1 tbsp Tomato paste with seasoned vegetables
  • 600 g 1 stewed cucumber
  • 3 piece Young lovage stems fresh from the herb patch
  • 3 piece Salt and pepper
  • 3 piece Herbal mixture Italian
  • 2 piece 2 small balcony tomatoes as decoration

Instructions
 

preparation

  • Bring the minced meat to room temperature. Remove the cucumber stem and flower base, peel, quarter lengthways, remove the core. Halve the cucumber quarters lengthways again and cut into any pieces. Dice the bacon. Peel the shallot and cut into thin slices. Rinse the lovage branches and spin dry. Prepare the remaining ingredients.

  • Heat the oil moderately in a suitable casserole, then fry the minced meat in portions and vigorously on all sides. Add and fry the bacon and shallot. Now stir in the tomato paste and sear. Add the cucumber cubes and sprigs of herbs, stir and season. Reduce heat and let simmer with lid for approx. 20 minutes. Stir every now and then. Remove the herb sprigs and season to taste again. At the same time I prepared any amount of floury boiled potatoes.

Serving

  • Arrange the dish with the potatoes decoratively on preheated dinner plates and enjoy.
