Stick bread with and without wild garlic

Ingredients for 8 servings:

  • 1,000 g flour
  • 2 cup(s) milk, lukewarm
  • 4 tbsp oil
  • 2 packets of yeast
  • 2 tsp salt
  • 2 tsp honey
  • 1 bunch of wild garlic

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the yeast and honey. Chop the wild garlic. Add the milk, oil, salt, and wild garlic and knead with a mixer (dough hook) or by hand until a smooth dough forms. Add a little more milk or flour as needed. Cover the dough and let it rise in a warm, quiet place for about 30 to 60 minutes. I find the dough rises best in the oven. Briefly preheat the oven to about 50°C. Then turn it off and place the dough inside. To grill, roll the dough into strands about 1-2 cm thick and wrap them spirally around suitable sticks. This is important for even cooking. Hold the stick bread over the embers of the campfire for about 15 minutes, turning it regularly. If you don’t have wild garlic or don’t like it, simply omit it. You can also add Italian herbs and a little garlic to the dough, depending on your taste. We like to serve it with tzatziki.
