Ingredients for 1 servings:

  • 2 eggs
  • 100 g butter, melted
  • 150 ml milk
  • 50 g sugar
  • 1 pinch of salt
  • tsp cinnamon
  • 80 g honey
  • 350 g flour
  • 2 tsp, leveled baking powder
  • 100 g trail mix
  • 50 g cranberries
  • 3 tbsp rum
  • n. B. Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

for 12 muffins

Remove the nuts and almonds from the trail mix and roughly chop them in a food processor, then add them back to the remaining trail mix. Mix the cranberries with the rum and let them sit for about 10 minutes. Mix the eggs with melted butter, milk, sugar, a little salt, cinnamon, and honey. Add the flour and baking powder and mix until smooth. Mix the batter with the trail mix and cranberries. Line muffin tins with paper liners and fill with the batter. Bake in a hot oven at about 170 degrees Celsius (350 degrees Fahrenheit) with top/bottom heat for about 15-20 minutes. Then let them cool and finally dust with powdered sugar.
