Ingredients for 4 servings:
- 2 onions, red
- 1 clove(s) garlic
- 400 g mushrooms
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 4 spring onions
- 4 slices of farmhouse bread
- 3 tbsp oil
- salt and pepper
- 4 eggs
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat electric oven to 200°C. Peel the onions and garlic, and slice them into thin rings. Clean and wash the mushrooms, if necessary, and slice them. Halve the bell peppers, clean and wash them along with the spring onions. Cut the bell peppers into thin strips and the spring onions diagonally into rings. Bake the bread for about 5 minutes on a baking tray lined with baking paper until crispy (electric oven 200°C, gas mark 4, fan oven 180°C) and rub it with the garlic. Crush the remaining garlic and sauté it with the onions, mushrooms, bell peppers, and spring onions in 2 tablespoons of heated oil, and season with salt and pepper. Meanwhile, fry four fried eggs in the remaining fat. Top each slice of farmhouse bread with vegetables, place the fried eggs on top, and serve warm.
