Strasbourg sausage salad

Ingredients for 4 servings:

  • 700 g meat sausage
  • 300 g cheese (Emmental, Gruyère, Comté or mountain cheese)
  • 1 large onion(s)
  • 1 tsp mustard, medium or hot
  • 10 tbsp beef broth
  • 3 tbsp white wine vinegar
  • 5 tbsp vegetable oil
  • 1 pack of ready-made product, (Salatfix Balsamic vinegar)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Prepare a salad dressing with Salatfix balsamic vinegar, vinegar, broth, oil, mustard, and salt. Remove the skin from the sausage and cut it into strips (or buy pre-cut bologna). Mix the sausage strips with the marinade in a bowl and let it marinate for an hour. Then finely slice the onions and fold them into the salad. Cut the cheese into strips and add them to the salad last so that the cheese doesn’t get soggy in the marinade. Taste and adjust the seasoning if desired. Tip: If you like, you can also use gherkin strips and/or red bell pepper strips. This goes well with baguette, ciabatta, pide, sourdough bread, white bread, toast, or even fried potatoes.
