Strawberries on nut rocket

Ingredients for 4 servings:

  • 500 g strawberries
  • 200 g rocket
  • 3 tbsp walnuts, coarsely chopped
  • 1 tsp mustard
  • 2 tbsp oil (walnut oil)
  • 100 ml balsamic vinegar
  • 3 tbsp maple syrup
  • ½ orange(s), untreated, zest and juice
  • 1 tsp apricot jam
  • Salt and pepper, black from the mill

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Mix the balsamic vinegar with the maple syrup and simmer over medium heat for about 5 minutes until thickened, then let cool. Rinse and quarter the strawberries, fold them into the cooled marinade, and let marinate for a few minutes. Roughly chop the walnuts and toast them in a dry pan until fragrant. Wash the rocket, tear them into bite-sized pieces, and arrange them on a platter. Remove the strawberries from the marinade and arrange them on top of the rocket. Mix the marinade with the orange juice, orange zest, mustard, jam, and oil. Season with a little salt and freshly ground black pepper. Drizzle the marinade over the salad and scatter the walnuts on top.
