Strawberry-apricot jam

Ingredients for 5 servings:

  • 1 ¼ kg strawberries, fresh
  • 750 g apricot(s), fresh
  • 2 ½ tsp, grated orange zest
  • 5 tbsp lemon juice
  • 1 kg gelling sugar 2:1

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 3 minutes; Total time approx. 4 hours 33 minutes

Peel the fruit and cut into small pieces. Mix the pieces with the other ingredients and let stand, covered, for about 3-4 hours. Then, bring the fruit to a rolling boil in a tall pot for 3 minutes. Then fill screw-top jars with the jam to the brim. Screw the lids on the jars and let them rest on the lids for 15 minutes.
