Strawberry balsamic jam with pepper

Ingredients for 1 servings:

  • 1,000 g strawberries, washed and cleaned
  • ½ cup balsamic vinegar
  • 1 pack of citric acid
  • 500 g gelling sugar (2:1)
  • 1 tbsp black peppercorns, crushed or ground

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 29 minutes

Cut the strawberries into small pieces and roughly puree if necessary. Place in a large, deep saucepan. Add the vinegar, citric acid, and gelling sugar. Bring to a boil, stirring constantly. Boil gently for 4 minutes. Remove from the heat. Skim off the foam and add the cracked pepper. Pour the hot mixture into prepared, sterilized twist-off jars.
