Peach and vanilla dome cake

Ingredients for 1 servings:

  • 7 eggs
  • 150 g sugar
  • 110 g flour
  • 40 g cornstarch
  • 2 packs of QimiQ (vanilla flavor)
  • ½ liter whipped cream
  • 1 can peach(s) (halves)
  • e.g. marzipan or rolled fondant or chocolate coating, white

Working time approx. 45 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 5 minutes

For the batter, beat the eggs and sugar in a food processor for about 10 minutes until creamy. Then sift in the flour and cornstarch and fold in with a large wooden spoon. Prepare a large semicircular bowl. Divide the batter between two springform pans of different sizes, lined with baking paper. Bake at about 175°C (fan oven) for about 20 minutes. Make sure the larger cake base is still hot in the bowl, otherwise it will crack! Mix QimiQ in a bowl until creamy and fold in the whipped cream. Spoon 1/3 of this mixture onto the cooled dome and spread half of the peaches, chopped if desired, on top. Cover with another third of the vanilla mixture and more peaches. Spread the rest of the cream on top, cover with the smaller cake base and chill. After cooling for about 2 hours, turn the cake out of the bowl and decorate as desired. I like to cover the dome cake with marzipan or rolled fondant, but it also works very well with white chocolate coating.
