Strawberry Dream Jam

Ingredients for 1 servings:

  • 500 g strawberries, ripe to very ripe
  • 2 m.-large banana(s), very ripe
  • 4 small peaches, very ripe and soft
  • 2 packets of vanilla sugar
  • 1 medium-sized lemon(s)
  • ¾ pack of gelling sugar, 2:1

Instructions

Working time approx. 10 minutes; Rest time approx. 1 day 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 1 day 3 hours 30 minutes

Wash the strawberries and peaches. Remove the green parts from the strawberries and cut the peaches into 4 pieces, along with the stones. Cut the strawberries and peaches into very small pieces. Peel the bananas and cut them into very small pieces. Place everything in a large pot and puree using a hand blender. Add the pieces of fruit or not, depending on your taste. Squeeze the lemon, add the juice, add the vanilla and gelling sugar, and continue stirring. Let everything rest for 2-3 hours. Bring to a boil and simmer for about 4 minutes. Place a test piece on a plate. If it sets, immediately pour the jam into prepared jars, seal, and let cool. If the test piece doesn’t set, add more gelling sugar and boil. I needed 3/4 of a packet of 2:1 gelling sugar. A really good jam for breakfast or as a snack.
