Ingredients for 1 servings:

  • 570 g strawberries, cleaned
  • 30 g fresh ginger
  • 1 ½ lemon(s) (organic lemons), the juice
  • 300 g gelling sugar 2:1

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 34 minutes

a sweet and spicy treat

Place the hulled and halved strawberries in a large saucepan. Scrape the thin skin off the ginger with a knife or small spoon. Finely dice the ginger and add it to the saucepan with the strawberries. Squeeze the lemons, drizzle the juice and, if desired, the squeezed lemon pulp over the strawberries and ginger. Sprinkle the gelling sugar over the contents of the saucepan, cover, and let stand for 1 hour. Set the stove to the highest heat and mix well with a silicone or wooden spoon. Once the mixture is hot, puree it with a potato masher until the desired consistency is reached. Then boil briskly for 4 minutes and pour into twist-off jars while still hot.
