Strawberry – Mandarin – Lemongrass – Jam

Ingredients for 4 servings:

  • 500 g strawberries
  • 1 class can/n mandarin(s) (drained weight approx. 170 g)
  • 1 tbsp lemongrass, cut into thin rings
  • 300 g gelling sugar for strawberries
  • 1 dashes lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and hull the strawberries, then cut them into small pieces. Puree them with the mandarins. Cook with the gelling sugar and lemongrass according to the instructions and then fill jars. I’ve also made a ginger version – instead of lemongrass. The spiciness is “different” then (but also delicious) – but the jam mentioned above was the most popular with friends and family. I got an average of 3-5 jars out of the batch (depending on the size). It’s a delicious, refreshing alternative, especially during these hot days.
