Ingredients for 1 servings:
- 500 g strawberries
- 3 oranges
- 1 piece(s) ginger, approx. 1 – 2 cm
- 300 g gelling sugar 2:1, e.g. for strawberry jam
- 1 dashes lemon juice
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 5 minutes
Wash and quarter the strawberries. Remove as much of the zest from half an orange with a paring knife, without peeling the white pith underneath. Cut the zest into fine strips. Fillet two oranges and reserve the juice, then juice the third orange. Finely chop the ginger. Weigh the strawberries and orange segments (a total of 600g) and place them in a saucepan. Add the orange juice, ginger, and orange zest. The ginger has a very strong flavor, so use a little less. Sprinkle over the gelling sugar and bring to a boil. Boil gently for 3-5 minutes. Season to taste with lemon juice. Pour the jam into sterile jars. You can make it sterile, for example, by placing it in the oven at 120°C for 20 minutes. Screw the filled jars shut and turn them upside down for 10 minutes.
