Strawberry – pineapple – jam

Ingredients for 1 servings:

  • 350 g pineapple, fresh
  • 500 g strawberries
  • 150 ml pineapple juice or nectar
  • 500 g gelling sugar, 2:1

Makes 6-8 small jars. Wash the strawberries and remove the green stems. Peel the pineapple, remove the hard stem, and cut the flesh into large pieces. Heat the strawberries and pineapple with the sugar and juice in a large saucepan until the sugar has dissolved. Purée and bring to a rolling boil, then reduce the heat and simmer gently for about 10 minutes, until the jam tests for set (sprinkle a little jam onto a plate; it should be set after about 1 minute). Pour into cold, rinsed jars and seal tightly.
