Strawberry Tiramisu

Ingredients for 8 servings:

  • 500 g strawberries
  • 4 eggs
  • 1 orange(s), the juice (alternatively 1/8 l apple juice)
  • 1 packet of vanilla sugar
  • 500 g mascarpone
  • 1 package of ladyfingers
  • Chocolate sprinkles, for sprinkling

Working time approx. 35 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 35 minutes

Wash the strawberries and cut them into pieces. Juice the orange and pour it into a deep plate (or use apple juice). Separate the eggs and put them in two separate bowls. Beat the egg yolks, sugar, and vanilla sugar until the mixture is fluffy and the sugar has dissolved. Stir in the mascarpone a spoonful at a time. Beat the egg whites until stiff peaks and carefully fold them into the mascarpone cream. Now briefly soak half of the sponge fingers on one side in the juice. Then place them in the dish. Distribute 250g of strawberries over the sponge fingers. Spoon half of the mascarpone cream on top. Repeat with the remaining ingredients. Cover the bowl with cling film and refrigerate for a few hours. Sprinkle with chocolate shavings just before serving. Tip: You can also make this with raspberries or peaches.
