Strawberry-vanilla jam

Ingredients for 4 servings:

  • 500 g gelling sugar 3:1
  • 1 small tonka bean(s)
  • 1 vanilla pod(s)
  • 1,500 g strawberries, peeled and weighed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cut 500g of strawberries into small pieces, then puree the rest with a hand blender. Place the strawberry pieces and puree in a large saucepan. Scrape out the vanilla pod and add it to the strawberries. Grate the tonka bean over the pan with a nutmeg grater. Add the gelling sugar, stir, and bring to a boil. Boil for 3 minutes until bubbly. Pour into hot, rinsed twist-off jars and seal.
