Strawberry-Watermelon Jam

Ingredients for 1 servings:

  • 750 g strawberries
  • 750 g watermelon(s)
  • ½ tsp citric acid
  • 500 g gelling sugar 3:1 or 750 g 2:1
  • Rum, brown

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and chop the strawberries, then deseed the watermelon flesh and cut into small pieces. Purée the berries and about 500g of the melon in a blender and transfer to a tall saucepan. Add the sugar and citric acid and bring to a boil. Halfway through the cooking time (as indicated on the sugar packet), add the remaining melon pieces, which should be quite small. Finish cooking, then pour into rinsed twist-off jars. Either fill the jars to the brim and invert them, or (my favorite alternative) drizzle with 1 tablespoon of rum, light the jar, and seal while the alcohol is still burning.
