Ingredients for 4 servings:
- 1 large fish (char)
- 500 g mushrooms, brown
- 3 shallots
- 1 sprig(s) rosemary
- 1 small bunch of parsley, flat
- 1 jar white wine
- 1 pepper, fresh, red
- 1 clove(s) garlic
- 3 tbsp oil (olive oil)
- 30 g butter
- pepper
- nutmeg
- Salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely chop the shallots and sauté them in olive oil in a pan. Sauté the finely sliced mushrooms, then add the finely chopped garlic clove and the finely chopped chili pepper (not too much!). Remove from the heat. Season with salt, pepper, and nutmeg. Clean the char and pat dry. Season with salt and pepper. Grease aluminum foil with butter and place the filling in the center. Place the char upright on the foil, pour in a glass of wine, loosely close the foil, and steam in the oven at 250°C. It’s cooked when you can peel off the dorsal fin. The exact time depends on the size.
