Ingredients for 8 servings:
- 1 kg minced lamb
- 3 rolls, stale
- 500 g sheep’s cheese
- 100 g olives, black pitted
- 1 bag of soup (onion soup)
- 6 Pepper, mild
- 1 pack of Italian herbs (frozen)
- 4 cloves garlic
- 3 eggs

Party recipe
Place the following ingredients in a large bowl: the minced lamb, the onion soup packet, eggs, chopped garlic, 50g chopped olives, and bread rolls (soaked in warm water first and then squeezed out any excess liquid). Mix all ingredients well and season with a little salt and cayenne pepper. Place a layer of minced meat in a large loaf pan and press the feta cheese into the center. Sprinkle the remaining olives, pepperoni, and herbs over the cheese and cover with the remaining minced meat. (The meat must be tightly sealed all around!). Place the loaf pan in the oven at 200°C for 45 minutes. After 45 minutes, remove the meatloaf and turn it out onto the oven rack (this will drain off the strong-tasting fat). Bake the meatloaf for another 45 minutes until crispy. Serve with bread, salads, and antipasti. Can be made ahead of time—also tastes good cold—ideal for parties.
