Peaches with delicious chocolate filling – perfect with vanilla ice cream
Halve the peaches and remove the stones. It’s very important that they’re well-ripened so the stones can be easily removed! Roughly hollow them out with a sharp knife and set the cut-out flesh aside. Place the peaches in a lightly buttered baking dish. Finely chop the dark chocolate. Briefly blend the nuts with butter, sugar, and oats in a blender, then add the peach flesh and whirl briefly again. Remove the mixture and mix with the chocolate. Fill the hollowed-out peaches. Pour in the wine and liqueurs and bake in the oven at 200°C on the second lowest rack for about 30 minutes. If the chocolate is in danger of burning, reduce the temperature slightly about 10 minutes before the end of the cooking time. Serve the peaches hot with vanilla ice cream. The liquid can be easily strained and reduced to a very aromatic jelly, for example, or enjoyed as a drink… You could probably use nectarines instead of the peaches! If you don’t have peach liqueur or amaretto on hand, you can replace it with more white wine.
