Ingredients for 1 servings:
- 200 g cream cheese
- 1 tbsp milk
- 30 g pistachios, very finely chopped
- salt and pepper
- 250 g apricot(s) (soft)
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
For the filling, mix the cream cheese with the milk and pistachios. Season to taste with a pinch of salt and pepper. Using a piping nozzle, fill the mixture into the apricots. The pistachios must be chopped very finely, otherwise they will clog the nozzle. For a bit of crunch, you can also insert a whole pistachio into the apricot. Soft apricots are dried apricots from which all the moisture has not been removed. They are still very soft. My 250g package contained about 30 apricots. The recipe can, of course, also be made with other soft fruits (plums, figs).
