Ingredients for 2 servings:
- 4 beefsteak tomatoes
- 1 slice(s) smoked bacon
- 1 ball of mozzarella
- 1 bag(s) of ready-made salad mix (e.g. Italian style)
- 5 tbsp olive oil
- 5 tbsp water
- 1 clove(s) garlic
- 1 pinch of sugar if needed
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Tomatoes stuffed with bacon and mozzarella
Dice the mozzarella. Mix the ready-made salad mix with 5 tablespoons each of olive oil and water, press in the garlic, and add a pinch of sugar if desired. Marinate the mozzarella cubes in it for at least a few hours, preferably overnight. Wash the tomatoes, cut off the tops, and remove the seeds. Remove the cores from the tops. Dice the bacon. Place the tomatoes in an ovenproof dish and fill with the bacon cubes and mozzarella cubes. Place the tomato lids on top and place a mozzarella cube in the hole. Spread the marinade from the marinating process on and around the tomatoes. If you have any leftover bacon cubes, arrange these around the tomatoes as well. Bake everything in a preheated oven at 200°C (top/bottom heat) for 20 minutes. Serve with rice or flatbread.
