Ingredients for 4 servings:

  • 1 m.-large zucchini
  • 500 g minced meat, half and half
  • 1 onion(s)
  • 1 pt. Ham, cooked
  • 1 bag of Parmesan cheese (50 g)
  • 250 g sweet cream
  • Tomato ketchup
  • 1 bunch parsley (or frozen)
  • salt and pepper
  • 1 egg(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Halve the zucchini lengthwise, scoop out some of the flesh with a tablespoon, and pre-cook in salted water for about 10-15 minutes. Meanwhile, dice the onions and sauté in oil. Add the minced meat and fry until crispy, then season with salt and pepper. Once browned, knead the minced meat with the diced ham, raw egg, parsley, and Parmesan cheese until smooth and fill the pre-cooked zucchini halves. Place the zucchini in a greased baking dish and pour over a sauce made from cream and ketchup. The sauce should be pinkish-red. Bake in the oven at 200°C for about 20 minutes. Serve with rice.
