Substitute for Egg: Vegan Alternatives

There are definitely vegan substitutes for eggs. In this article, we present both substitutes for cooking and for baking.

How to substitute an egg when cooking

You can now even use egg substitute products to make vegan fried or scrambled eggs. How and, above all, what this works, we will explain to you in the following.

  • Fried egg: There are various egg substitute powders that you can mix and then even open. However, since these can sometimes be quite expensive, just make them yourself. All you have to do is mix 2 tablespoons of flour with 1/2 teaspoon of oil, 2 tablespoons of water, and 1/2 teaspoon of baking powder. This amount is roughly equivalent to one large egg.
  • Scrambled Eggs: Scrambled eggs are easy to make with tofu. For this, you have to heat tofu in sunflower oil and fry it together with turmeric. This spice gives the tofu its typical yellow egg color. Then add some still mineral water and about 1 tablespoon of white almond butter. Then season the scrambled eggs to your liking and it’s done.
  • Ground flaxseed can also be substituted for an egg in savory recipes. One and a half tablespoons of flaxseed are mixed with twice the amount of water. This mixture then replaces an egg.
  • A few chickpeas are also suitable as an egg substitute in cooking recipes. The mixing ratio of chickpeas to water is the same as for the flaxseed substitute.
  • For the typical taste of eggs, you can season your dishes with black salt, also known as Kala namak. Due to the slightly sulfurous, aromatic taste, it tastes particularly good in scrambled eggs made from tofu.

Baking without eggs

Depending on the type of dough, you can substitute an egg in different ways.

  • Eggs in Muffins: If the number of eggs listed in the recipe is less than 3, you can often just omit the eggs altogether.
  • If you want to replace an egg in a batter, the best way to do this is with egg replacer powder. You can also use almost any fruit puree.
  • You can also use soy flour to bind the dough well. For this purpose, 2 tablespoons of soy flour are mixed with 2 tablespoons of water and added to the dough.
  • The most difficult thing to replace is eggs in biscuit dough since the egg whites are usually whipped up here. You can whip the egg replacer powder quite well, but many recipes now even do without eggs.
  • You can also replace an egg with tofu here. You should use silken tofu, as it is much finer than cotton tofu. One egg is replaced with about 75ml of pureed tofu.
  • In general, you can replace eggs in batter with a suitable fruit puree. This includes, for example, finely pureed banana or applesauce. But the banana also has a very strong taste of its own in a dough. Half a banana or 80ml apple sauce replaces one egg.
