Ingredients for 4 servings:

  • 300 g apricot(s), dried, soaked overnight in 500 ml water
  • ½ tbsp honey (acacia)
  • 2 tbsp lemon juice
  • 4 tbsp natural yogurt, 3.5%
  • 1 pomegranate, single seeds
  • 50 g sesame seeds, unhulled
  • Honey

Working time approx. 30 minutes; Total time approx. 30 minutes

Apricot cream with sesame brittle, natural yogurt and pomegranate seeds

Bring the apricots and their soaking water to a boil, add the honey and lemon juice, and simmer for about 25 minutes until a thick cream forms, stirring frequently. Purée the mixture and chill. For the sesame brittle, toast the sesame seeds in a dry pan, stirring constantly until the seeds begin to pop. Mix the honey into the hot sesame seeds. Spread the mixture evenly on a plate and let it cool. After 2 hours, the brittle is ready to cut. Place 2 tablespoons of apricot cream on a dessert plate for each person, then add 2 tablespoons of yogurt. Sprinkle with 2 tablespoons of pomegranate seeds and a few pieces of brittle.
