Summer Pasta Salad

The perfect summer pasta salad recipe with a picture and simple step-by-step instructions.

  • 2 St. Chicken breast
  • 0,5 Pk Fusilli or other pasta
  • 3 St. Spring onions fresh
  • 8 St. Cocktail tomatoes
  • 2 Discs Gouda cheese
  • 2 spoon Chili pepper paste from my cookbook
  • Salt
  • Pepper
  • 1 Pk Salad herbs
  • Olive oil
  • Freshly squeezed lemon juice
  1. Cook the pasta according to the instructions on the packet and allow to cool. Then put in a bowl to wait.
  1. Marinate the chicken breast with salt, pepper and the chilli-paprika paste. Fry in a pan and after half the cooking time cut in half at the thickest point to finish cooking. You can also cut them into small pieces and marinate them beforehand, but I don’t like the raw chicken and I find it more juicy.
  1. Let the chicken cool down, cut into small pieces and add to the pasta. Chop the spring onion, cut the tomatoes in half or eighth depending on their size and taste, and cut the cheese into small pieces. Add everything to the pasta.
  1. Mix the salad herb packet according to the instructions, if you are talented you can also mix your own dressing – unfortunately I was not born :-), if you like it spicy, add a spoonful of chilli-paprika paste to it and over it distribute the salad.
  1. Mix everything vigorously, possibly spice it up again with salt or pepper and add a splash of fresh lemon juice over it, that gives that extra kick in summer!
  1. Great to take with you to work, when you open the lid, it smells like summer evening and barbecuing – it’s not so far after work 🙂
