Summer pointed cabbage

Ingredients for 4 servings:

  • 1 small pointed cabbage
  • 1 tbsp sea salt
  • 1 tsp sugar
  • 4 tomatoes (plum tomatoes)
  • 5 tbsp pine nuts
  • Pepper, black from the mill
  • Sea salt
  • Thyme, dried
  • olive oil

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Dice the pointed cabbage and toss with 1 tablespoon of salt and 1 teaspoon of sugar. Cover and let stand for about 30 minutes. In the meantime, roast the pine nuts in a dry pan. Fillet the tomatoes and dice them as well. The tomato pieces should be about the same size as the pointed cabbage pieces. Drain the pointed cabbage and let it drain. Heat olive oil in a pan and briefly sauté the pointed cabbage. Add the diced tomatoes and pine nuts. Season everything with thyme, freshly ground black pepper, and more salt if desired. Quick to make, ideal with grilled meat, or eaten cold as a salad.
